<p>燒江鮮近三十年的程峰師傅來自安徽。從小住在水岸邊，五六歲便通曉水性，童年的日子總是浪裡來、水裡去，跟著打漁的父親識水認魚，對於江河湖裡的各種美味食材無比熟悉。15歲離鄉背景，在江陰開啟廚涯，更是全心投注在江鮮烹飪的鑽研。</p>
<p>於是，我們約定了在中秋節前夕，一同來提前慶祝，也上一堂《徽菜、長江江鮮識魚解味》課。</p>
<p><span class="_5mfr"><span class="_6qdm"><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f980.png" alt="🦀" class="wp-smiley" style="height: 1em; max-height: 1em;" /></span></span> 冷菜裡的螃蜞螯，殼薄脆，咬開滿嘴蟹的鮮甜，要不是怕牙崩，我可以就著酒，一直一直啃下去。秋季水生菜也紛紛上市，蓮花瓣裡桂花蓮子山藥泥，又美又清爽。長江蝦個頭小指節大小，色澤紅亮，用糟滷十足夠味。</p>

<p><span class="_5mfr"><span class="_6qdm"><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f421.png" alt="🐡" class="wp-smiley" style="height: 1em; max-height: 1em;" /></span></span> 江陰是中國第一個被准許售販河豚的地方，帶著刺的皮，程師傅細心向內反摺，提醒淺嚼幾口便吞下，河豚肝鮮嫩嫩，真是美味，紅燒醬汁拌飯，一碗瞬間光盤。</p>

<p><span class="_5mfr"><span class="_6qdm"><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f41f.png" alt="🐟" class="wp-smiley" style="height: 1em; max-height: 1em;" /></span></span> 鮰魚兩吃。魚肉做成鮮嫩鮰魚獅子頭，清新軟嫩，魚骨吊出奶白濃郁魚湯，鮮得掉眉。剛送到的新鮮鮰魚，取出鮰魚花膠，細白如玉，肥厚有彈性，佐雲南酸木瓜湯，忽冷忽熱的秋季天，爽口好開胃。</p>

<p><span class="_5mfr"><span class="_6qdm"><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f41f.png" alt="🐟" class="wp-smiley" style="height: 1em; max-height: 1em;" /></span></span> 長江鱸魚與海鱸魚最大的區別是身形苗條，肉質更細緻，簡單清蒸，原味呈現最好。巨浪魚刺多但肉特別細緻，我也就心甘情願，抿著抿著，參照刀魚吃法，慢條斯理來品嚐。</p>

<p><span class="_5mfr"><span class="_6qdm"><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f41f.png" alt="🐟" class="wp-smiley" style="height: 1em; max-height: 1em;" /></span></span> 再來幾道安徽地方味道。魚泡泡跟著白蘿蔔辣辣的燒，嚼勁足，滿口被膠質親密黏著，下酒夠味。第一次見識到著名的安徽雜魚鍋，各種小魚混燉，鱸魚、河豚、蝦蟹螺絲，用大量安徽青紅鮮辣椒、花椒，燒得又香又辣的，太迷人了。</p>
<p>謝謝程峰師傅與惠總的安排。燉了一夜的人參魚翅老鴨湯和流心奶皇月餅，提前共度中秋團圓。謝謝小寶弟，百忙中，特別趕來相伴。一堂寶貴的江鮮課，一場無比美味的中秋宴。吃江鮮在云空煮海。</p>
