<p>來自東京米其林二星-ESqUISSE的主廚Lionel，這二天在台北RAW和主廚Andrea江振誠，以「島嶼。海洋」為主題的聯手餐會，大概是我吃過協調性、主題性最一致，且旗鼓相當的雙主廚餐會。</p>
<p>一個法國大廚熱衷亞洲食材，一個亞洲大廚熟悉法菜技巧，二人二十年前在法國師出同門，在某種程度上，他們血液裏流淌著對美食近似的基因、述說著相同的語言。他們把各自生長，學習，定居的城市，以經緯度為座標，畫一條線，再參考近似的海拔（包括海平面下)，找出食材，相互呼應，創作出一道又一道，獨特且與之生命歷程聯結的佳餚。</p>
<p>Lionel把苦苣和蜂鬥菜融於一盤，苦上加苦，但是加上伊比利火腿的鹹香泡沫，和cream ,綠豆，巴西利的濃潤醬汁，居然協調出苦中回甘又帶甜的豐富口感。Andrea的水果玉米，削成不可思議的薄片，覆著馬鈴薯麵疙瘩和蒙佩利爾奶油醬汁，神奇的佐以爆米花和烏魚子粉末，濃郁中不失清甜和香脆。二者皆為上品，必須要極豐富的想像力和絕佳的執行力方可成就，缺一不可。</p>
<p>科西嘉島、日本、台灣，共有島嶼的特性，有山有海，提供了豐富的食材和聯想，以及三種文化內涵的味覺體驗，交錯出現，卻又和諧共鳴，是一次相互輝映、彼此惺惺相惜的高水準演出。當然，某些技巧上的小瑕疵，仍然有，未臻完美，但是整體餐會的深度、完成度、體驗、美味、及服務生的專業程度，仍然值得其他業者參考。</p>
