<p class="p1"><span class="s1">雞肉控或許會有這樣的疑問，「為何速食店炸雞的外皮總是不一樣？口感特別酥脆。」說穿了不過是江湖一點訣，除各家醃製秘方不同外，狀似結痂的外皮使用了特製的「咔啦粉」，專業術語叫做「鱗片」。</span></p>
<p class="p1"><span class="s1">咔啦粉由多種材料混合製成，成分包括麪粉、玉米粉、奶蛋粉…等等，只要掌握蘸粉訣竅，在家也能炸出速食店等級的炸雞，試試吧。</span></p>
