<div dir="auto">螺肉魷魚蒜具有濃濃古早味，也是最具代表性的酒家菜，<wbr />魷魚口感爽脆、罐頭螺肉滋味甘甜，加上鮮嫩的豬肉或排骨，<wbr />以及氣味濃郁的芹菜與蒜苗，湯頭鮮甜無比，叫人一碗接一碗，<wbr />停不了。</div>

<div dir="auto">螺肉魷魚蒜的主要材料包括螺肉、魷魚與蒜苗三大主角，<wbr />排骨或豬肉片也少不了，還可以加進香菇、冬筍等好料，<wbr />配料更顯澎湃，早年台灣生活困苦，只有過年期間才有機會嘗鮮。</div>

<div dir="auto">隨著時代進步，螺肉魷魚蒜已經從昔日酒家菜轉變為特色台菜，<wbr />但仍有不少現代小孩沒吃過這道台灣味，甚至沒聽過。<wbr />婆婆媽媽們若有興趣在家自己做，其實並不難，<wbr />輕輕鬆鬆就能煮出湯中極品，全家人一起分享道地台灣料理。</div>

<div dir="auto">【材料】螺肉罐頭一罐、魷魚乾一尾、排骨或豬五花肉半斤、<wbr />青蒜兩支、芹菜一支、蒜頭三粒</div>

<div dir="auto">【調味料】糖、鹽、米酒、白胡椒粉、醬油</div>

<div dir="auto">一、魷魚乾用清水浸泡一晚，發泡完成後切片備用（<wbr />約5公分X3公分）。青蒜切成斜片狀、蒜頭切末，芹菜去掉葉子，<wbr />僅留硬梗部位，切成三公分小段。</div>

<div dir="auto">二、排骨或五花肉入鍋汆燙撈出，熱鍋倒進沙拉油，<wbr />先爆香蒜末再放進排骨爆炒，發過的魷魚也一併入鍋，<wbr />加入兩匙醬油炒出香氣，起鍋前沿鍋邊嗆米酒，取出備用。</div>

<div dir="auto">三、煮滾高湯或清水，加進魷魚、爆炒過豬肉或排骨，<wbr />先熬煮半小時，接著整罐螺肉罐頭，<wbr />連原汁一起倒進去續煮15分鐘。</div>

<div dir="auto">四、加進鹽巴、一小匙糖、一匙白胡椒粉調味，<wbr />最後再加進芹菜與蒜苗，迷人的螺肉魷魚蒜完成。</div>
